Ingredients
- Olive oil: 2 tablespoons
- Ground pork: 1 pound
- Ground veal: 1/2 pound
- Onion, finely chopped: 1 medium
- Celery, finely chopped: 1 stalk
- Carrot, finely chopped: 1 medium
- Dry white wine: 1/2 cup
- Chicken broth: 4 cups
- Heavy cream: 1/2 cup
- Parmesan cheese, grated: 1/2 cup, plus more for serving
- Salt: to taste
- Black pepper: to taste
- Pasta (such as tagliatelle or pappardelle): 1 pound
Instructions
- Step 1: Heat olive oil in a large, heavy-bottomed pot over medium heat. Add the ground pork and veal and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Step 2: Add the chopped onion, celery, and carrot to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
- Step 3: Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pot. Cook until the wine is mostly evaporated, about 5 minutes.
- Step 4: Add the chicken broth and bring to a simmer. Reduce the heat to low, cover, and simmer for at least 1 hour, or up to 2 hours, stirring occasionally. The longer it simmers, the richer the flavor will be.
- Step 5: While the sauce is simmering, cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- Step 6: Stir in the heavy cream and Parmesan cheese into the sauce. Season with salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta water to reach desired consistency. Add the cooked pasta to the sauce and toss to coat. Serve immediately, topped with extra Parmesan cheese.

- For optimal flavor, store leftover White Bolognese in an airtight container in the refrigerator for up to 3 days.
