Instructions
- Step 1: Cook the pasta according to package directions. Reserve about 1 cup of the pasta water before draining.
- Step 2: While the pasta is cooking, combine the drained sun-dried tomatoes, soaked cashews, garlic, nutritional yeast, vegetable broth, and lemon juice in a high-speed blender.
- Step 3: Blend all ingredients until completely smooth and creamy, adding a little of the reserved pasta water if needed to reach desired consistency.
- Step 4: Pour the sun-dried tomato sauce over the cooked pasta. Toss to coat well, adding more pasta water if needed to adjust the consistency.
- Step 5: Stir in the chopped fresh basil. Serve immediately and enjoy!
