Ingredients
- Mascarpone cheese: 500g
- Heavy cream: 240ml
- Egg yolks: 4 large
- Granulated sugar: 100g
- Strong brewed coffee, cooled: 300ml
- Savoiardi ladyfingers: 24
- Truffle oil: 1 tablespoon
- Cocoa powder, for dusting: 2 tablespoons
Instructions
- Step 1: In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a saucepan of simmering water (double boiler), ensuring the bowl doesn't touch the water. Cook, whisking constantly, until the mixture is pale yellow and has thickened slightly, about 5-7 minutes. Remove from heat and let cool slightly.
- Step 2: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the mascarpone cheese into the cooled egg yolk mixture until smooth. Then, gently fold in the whipped cream until just combined. Stir in the truffle oil.
- Step 3: Lightly dip each ladyfinger into the cooled coffee, ensuring not to soak them completely. Arrange a layer of coffee-soaked ladyfingers in the bottom of a serving dish.
- Step 4: Spread half of the mascarpone cream mixture over the ladyfingers. Repeat with another layer of coffee-soaked ladyfingers and the remaining mascarpone cream mixture.
- Step 5: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
- Step 6: Before serving, dust the top of the tiramisu generously with cocoa powder. Slice and serve chilled.
Notes
- For best flavor, store leftover Truffle Tiramisu covered in the refrigerator for up to 3 days; the flavors deepen beautifully over time.
- Reheating isn't recommended for tiramisu; enjoy it chilled straight from the fridge for the optimal texture and taste.
