- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs, separated
- 1 cup heavy cream
- 16 ounces ladyfingers
- 1 cup strong brewed coffee, cooled
- 1/2 cup Kahlua or other coffee liqueur (optional)
- 1/4 cup unsweetened cocoa powder
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- Step 2: In a large bowl, beat cream cheese and sugar together until smooth and creamy. Beat in vanilla extract. Add egg yolks one at a time, mixing well after each addition.
- Step 3: In a separate bowl, beat egg whites until stiff peaks form. In another bowl, beat heavy cream until soft peaks form. Gently fold the whipped cream and egg whites into the cream cheese mixture, being careful not to deflate.
- Step 4: Dip ladyfingers quickly into the cooled coffee mixture (combined coffee and Kahlua, if using) – just enough to moisten them, not soak them. Arrange a single layer of ladyfingers in the bottom of the prepared pan. Pour half of the cheesecake batter over the ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and the remaining batter.
- Step 5: Bake for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then, remove from the oven and let cool completely on a wire rack.
- Step 6: Once completely cool, refrigerate for at least 4 hours, or preferably overnight. Before serving, dust with cocoa powder.
Notes
- Store leftover Tiramisu Cheesecake in the refrigerator for up to 3 days, tightly covered to prevent drying.
- For a warmer, slightly softer texture, briefly microwave individual slices for 10-15 seconds, but avoid over-heating.
- Serve this decadent cheesecake with a dollop of whipped cream and fresh berries for an extra touch of elegance.
- To prevent the ladyfingers from getting soggy, dip them in the coffee mixture very quickly and only until lightly moistened.
