- 1 large white onion
- 1 cup all-purpose flour

- 1 cup milk (or buttermilk)
- 1 cup panko breadcrumbs

Instructions
- Step 1: Slice the onion thinly into rings. Separate the rings and place them in a bowl of ice water for about 15 minutes. This helps to remove some of the sulfur compounds and makes them less pungent.
- Step 2: While the onion rings are soaking, prepare three shallow dishes. In the first, combine the flour, salt, pepper, and paprika. In the second, pour the milk. In the third, place the panko breadcrumbs.
- Step 3: Remove the onion rings from the ice water and pat them completely dry with paper towels.
- Step 4: Dredge each onion ring in the flour mixture, then dip it into the milk, and finally coat it thoroughly with the panko breadcrumbs.
- Step 5: Heat about 1 inch of vegetable oil in a large skillet or pot over medium-high heat until it reaches 350°F (175°C). Carefully add the onion rings to the hot oil in a single layer, being careful not to overcrowd the pan.
- Step 6: Fry the onion rings for 2-3 minutes per side, until golden brown and crispy. Remove them from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately.

- Store cooled chips in an airtight container at room temperature, but they're best enjoyed fresh for maximum crispness.
- Reheat these in a preheated air fryer at 350°F (175°C) for a few minutes to revive their crunch.
- Serve these crispy onion chips with your favorite dipping sauce, like a creamy sriracha mayo or tangy BBQ sauce.
- For extra flavor, try adding a pinch of garlic powder to the flour mixture for a savory kick.
