Ingredients
- Boneless, skinless chicken breasts: 4 (6-8 oz each)
- Olive oil: 2 tablespoons
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Bacon: 6 slices, cooked and crumbled
- Shredded cheddar cheese: 1 cup
- BBQ sauce: 1/2 cup
- Mushrooms: 8 oz, sliced
Instructions
- Step 1: Preheat oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Step 2: Sear the chicken breasts in the hot skillet for 3-4 minutes per side, until golden brown. They do not need to be fully cooked at this point.
- Step 3: Remove the skillet from the heat. Spread BBQ sauce evenly over the top of each chicken breast.
- Step 4: Top each chicken breast with sliced mushrooms, crumbled bacon, and shredded cheddar cheese.
- Step 5: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days, ensuring the chicken stays moist.
- For best results, reheat individual portions in the oven or air fryer to maintain the crispy bacon and melted cheese texture.
- Serve this smothered chicken with a side of mashed sweet potatoes or roasted corn for a complete, comforting meal.
- Don't overcrowd the skillet when searing; work in batches if necessary to ensure even browning and optimal flavor development.
