- 1 cup dry quinoa
- 2 cups vegetable broth
- 1 cup shredded sharp cheddar cheese
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Rinse the quinoa thoroughly under cold water using a fine-mesh sieve. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Step 2: Add the rinsed quinoa and vegetable broth to the saucepan. Stir well, then bring the mixture to a rolling boil over high heat.
- Step 3: Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it simmer for 15 minutes, or until all the liquid has been absorbed and the quinoa is fluffy. Do not lift the lid during this time.
- Step 4: Remove the saucepan from the heat and let it sit, still covered, for 5 minutes. Then, fluff the quinoa with a fork.
- Step 5: Stir in the shredded cheddar cheese, salt, and black pepper until the cheese is melted and well incorporated. Taste and adjust seasoning as needed. Serve warm.
