  • 2 cups vegetable broth
  • 1 cup shredded sharp cheddar cheese

  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: Rinse the quinoa thoroughly under cold water using a fine-mesh sieve. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  2. Step 2: Add the rinsed quinoa and vegetable broth to the saucepan. Stir well, then bring the mixture to a rolling boil over high heat.
  3. Step 3: Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it simmer for 15 minutes, or until all the liquid has been absorbed and the quinoa is fluffy. Do not lift the lid during this time.
  4. Step 4: Remove the saucepan from the heat and let it sit, still covered, for 5 minutes. Then, fluff the quinoa with a fork.
  5. Step 5: Stir in the shredded cheddar cheese, salt, and black pepper until the cheese is melted and well incorporated. Taste and adjust seasoning as needed. Serve warm.
