Ingredients
Scale
- 2 cups mixed salad greens
- 1 cup shredded carrots
- 1 cup thinly sliced bell peppers (red and yellow)
- 1 cup cucumber, julienned
- 1/2 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, roughly chopped
- 1 tablespoon sesame seeds
- 1/4 cup rice noodles, cooked
Instructions
- Step 1: In a large mixing bowl, combine the mixed salad greens, shredded carrots, sliced bell peppers, and julienned cucumber. Toss gently to mix all the vegetables evenly.
- Step 2: Add the chopped cilantro and roasted peanuts to the salad mixture. Stir carefully to incorporate the herbs and nuts without crushing them.
- Step 3: For the spicy juniper teager dressing, whisk together 3 tablespoons of olive oil, 2 tablespoons of rice vinegar, 1 tablespoon of soy sauce, 1 teaspoon of honey, and a pinch of crushed red pepper flakes in a small bowl. Add in a teaspoon of crushed juniper berries for added flavor.
- Step 4: Drizzle the dressing over the salad mixture and toss lightly to ensure all ingredients are well coated with the dressing.
- Step 5: Finally, sprinkle sesame seeds on top of the salad and add the cooked rice noodles. Serve immediately for a fresh, crunchy meal or appetizer.
Notes
- For storage, keep the salad and dressing separate in airtight containers in the fridge to maintain freshness, and assemble just before serving. If you have leftovers, the salad is best enjoyed cold; simply give it a gentle toss to refresh the ingredients before eating. For a delightful twist, serve the salad in rice paper wraps for a fun, hands-on dining experience that complements the crunchy textures. A chef's tip: feel free to customize your salad by adding other seasonal veggies or proteins like grilled chicken or tofu for extra flavor and nutrition!
