Ingredients
- Fresh pineapple, diced: 2 cups
- Red bell pepper, finely diced: 1/2 cup
- Jalapeño peppers, seeded and minced: 2-3 (adjust to taste)
- Red onion, finely diced: 1/4 cup
- Apple cider vinegar: 1/4 cup
- Brown sugar: 1/4 cup
- Fresh ginger, grated: 1 tablespoon
- Lime juice: 2 tablespoons
Instructions
- Step 1: Combine all ingredients (diced pineapple, red bell pepper, jalapeños, red onion, apple cider vinegar, brown sugar, ginger, and lime juice) in a medium saucepan.
- Step 2: Bring the mixture to a simmer over medium heat, stirring occasionally until the brown sugar dissolves completely.
- Step 3: Reduce the heat to low and continue to simmer, uncovered, for approximately 25-30 minutes, or until the chutney has thickened to your desired consistency, stirring occasionally to prevent sticking.
- Step 4: Remove the saucepan from the heat and let the chutney cool completely. The chutney will thicken further as it cools.
- Step 5: Store the Spicy Pineapple Jalapeño Chutney in an airtight container in the refrigerator. It will keep for up to a week.
Notes
- Store cooled chutney in a sterilized jar in the refrigerator for optimal preservation and flavor.
- Gently warm chilled chutney in a saucepan over low heat or microwave in short intervals for best results.
- This chutney shines when paired with grilled pork, fish tacos, or even spread on a simple cream cheese bagel for a surprising kick.
- For a more intense flavor, consider roasting the red bell pepper before dicing to add a touch of smoky sweetness.
