- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1/4 cup chopped onion (optional)
- 1/4 cup chopped green bell pepper (optional)
Instructions
- Step 1: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
- Step 2: Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid is absorbed. Stir in the optional onion and bell pepper during the last 2 minutes of cooking.
- Step 3: Sprinkle half of the cheddar and Monterey Jack cheese over one half of each tortilla. Top with the seasoned ground beef mixture. Sprinkle the remaining cheese over the beef.
- Step 4: Fold the other half of the tortilla over the filling to create a quesadilla.
- Step 5: Cook the quesadillas in the same skillet over medium heat for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and gooey. Press down gently with a spatula to ensure even cooking and melting.
- Step 6: Remove from skillet and cut into wedges to serve.
Notes
- Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
- For perfectly crisp reheated quesadillas, try air frying them at 350°F for 3-5 minutes.
