  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/4 cup chopped onion (optional)
  • 1/4 cup chopped green bell pepper (optional)

Instructions

  1. Step 1: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
  2. Step 2: Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid is absorbed. Stir in the optional onion and bell pepper during the last 2 minutes of cooking.
  3. Step 3: Sprinkle half of the cheddar and Monterey Jack cheese over one half of each tortilla. Top with the seasoned ground beef mixture. Sprinkle the remaining cheese over the beef.
  4. Step 4: Fold the other half of the tortilla over the filling to create a quesadilla.
  5. Step 5: Cook the quesadillas in the same skillet over medium heat for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and gooey. Press down gently with a spatula to ensure even cooking and melting.
  6. Step 6: Remove from skillet and cut into wedges to serve.

  • Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
