Ingredients
- Green beans, trimmed: 1 pound
- Mushrooms, sliced: 8 ounces
- Olive oil: 2 tablespoons
- Garlic, minced: 2 cloves
- Balsamic vinegar: 1 tablespoon
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
- Dried thyme: 1/2 teaspoon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, combine the green beans, sliced mushrooms, minced garlic, olive oil, balsamic vinegar, salt, pepper, and dried thyme. Toss to coat evenly.
- Step 3: Spread the green bean and mushroom mixture in a single layer on the prepared baking sheet.
- Step 4: Roast in the preheated oven for 20-25 minutes, or until the green beans are tender-crisp and the mushrooms are browned, stirring halfway through.
- Step 5: Remove from the oven and serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat in a skillet over medium heat to re-crisp the green beans slightly.
- A squeeze of fresh lemon juice right before serving brightens the flavors wonderfully.
- Don't overcrowd the baking sheet; use two if necessary to ensure even roasting and prevent steaming.
