Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Step 1: Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Step 2: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Step 3: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 4: In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth.
- Step 5: Roll the cookie dough into 1-inch balls. Flatten each ball slightly, then place a small spoonful of the cream cheese mixture in the center. Carefully wrap the cookie dough around the cream cheese filling, ensuring it's completely sealed.
- Step 6: Place the cookies on a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store leftover cookies in an airtight container in the refrigerator to keep the cream cheese filling fresh.
- For a warm, gooey treat, microwave a cookie for about 10-15 seconds before serving.
- Serve these delightful cookies with a cold glass of milk or a scoop of vanilla ice cream for an extra decadent dessert.
- Chef's tip: Be gentle when mixing the dry and wet ingredients to ensure soft cookies; overmixing develops gluten, leading to a tougher texture.
