Instructions

  2. Step 2: Make the custard base. In a medium saucepan, whisk together the egg yolks and the remaining 1/4 cup sugar until pale and slightly thickened. Gradually whisk in 1 cup of the heavy cream.
  3. Step 3: Cook the custard. Cook the mixture over medium-low heat, stirring constantly with a spatula, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not boil. Remove from heat and immediately whisk in the pistachio paste, vanilla extract, and salt.
