Ingredients
- Chicken breasts (boneless, skinless) – 2 large
- Grated Parmesan cheese – 1 cup
- Breadcrumbs (plain or Italian) – 1/2 cup
- Garlic powder – 1 teaspoon
- Dried oregano – 1/2 teaspoon
- Eggs – 2 large
- Olive oil – 2 tablespoons
- Salt and pepper – to taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
- Step 2: In a shallow dish, whisk together the eggs. In a separate shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Step 3: Dip each chicken breast into the egg mixture, allowing excess to drip off. Then, dredge the chicken in the Parmesan cheese mixture, pressing firmly to coat both sides.
- Step 4: Place the coated chicken breasts onto the prepared baking sheet. Drizzle with olive oil.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. Ensure the internal temperature reaches 165°F (74°C).
Notes
- Store leftover Parmesan crusted chicken in an airtight container in the refrigerator for up to 3 days.
- For best results when reheating, place the chicken back on a baking sheet and warm in a 350°F (175°C) oven until heated through to help maintain crispness.
- Serve this chicken with a simple side salad and roasted vegetables for a complete and satisfying meal.
- Press the Parmesan mixture firmly onto the chicken to create a thicker crust that will stay put during baking.
