- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound penne pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/2 cup tangy BBQ sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cups chicken broth
Instructions
- Step 1: Preheat oven to 400°F (200°C). In a large bowl, toss chicken, bell peppers, penne pasta, olive oil, BBQ sauce, honey and chicken broth together.
- Step 2: Spread the mixture evenly in a large baking dish or oven-safe skillet.
- Step 3: Cover the dish tightly with aluminum foil and bake for 30 minutes.
- Step 4: Remove the foil and bake for another 15-20 minutes, or until the pasta is cooked through and the chicken is cooked.
- Step 5: Let stand for 5 minutes before serving. Garnish with fresh parsley, if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat individual portions in the microwave with a splash of chicken broth to prevent drying.
- Serve with a simple green salad for a complete and balanced meal.
- To really amp up the flavor, consider marinating the chicken in half the BBQ sauce and honey mixture for at least 30 minutes before baking.
