- 1.5 lbs Boneless, skinless chicken breasts
- 1 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Italian seasoning
- 1 cup Long-grain rice, uncooked
- 2 cups Chicken broth
- 1/2 cup Heavy cream
- 1/2 cup Grated Parmesan cheese
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
- Step 2: Place chicken breasts in the prepared baking dish. Drizzle with olive oil and season with garlic powder and Italian seasoning.
- Step 3: Sprinkle the uncooked rice around the chicken. Pour chicken broth over the rice.
- Step 4: Cover the baking dish with foil and bake for 30 minutes.
- Step 5: Remove the foil and bake for another 15-20 minutes, or until chicken is cooked through and rice is tender.
- Step 6: Stir in the heavy cream and Parmesan cheese. Let it sit for a few minutes to allow the sauce to thicken slightly before serving.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat individual portions in the microwave with a splash of chicken broth to keep the rice moist.
- Garnish with fresh parsley or a sprinkle of extra Parmesan for a more elegant presentation.
- To ensure even cooking, lightly pound thicker chicken breasts to an even thickness before baking.
