- All-purpose flour: 2 1/2 cups
- Granulated sugar: 1 3/4 cups
- Baking powder: 2 1/2 teaspoons

Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. In a large bowl, whisk together flour, sugar, and baking powder.
- Step 2: In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Step 3: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Step 4: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
- Step 5: While the cakes are cooling, prepare the Chantilly cream. In a large bowl, whip the heavy cream until stiff peaks form. Gently fold in 1/2 cup of the granulated sugar and the vanilla extract.
- Step 6: Once the cakes are cooled, level the tops if necessary. Place one cake layer on a serving plate, spread with a layer of Chantilly cream and top with mixed berries. Repeat with the remaining cake layers and cream. Decorate the top of the cake with additional berries and a dusting of powdered sugar, if desired. Refrigerate for at least 30 minutes before serving.
Notes
- Store leftover cake in an airtight container in the refrigerator to prevent the Chantilly cream from drying out.
- A quick 10-15 seconds in the microwave can soften a refrigerated slice, but be careful not to melt the cream.
