- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 2 lbs potatoes, peeled and quartered
- 1/4 cup butter
- 1/4 cup milk
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, oregano, salt, and pepper. Gently mix until just combined. Do not overmix.
- Step 2: Roll the meat mixture into 1-inch meatballs. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, then transfer them to a baking dish.
- Step 3: In the same skillet, sauté the chopped onion until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the crushed tomatoes, cream of mushroom soup, and milk. Bring to a simmer, then pour the sauce over the meatballs in the baking dish.
- Step 4: Bake for 20-25 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
- Step 5: While the meatballs are baking, boil the potatoes in salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Mash with butter and milk until smooth and creamy.
- Step 6: Serve the meatballs in creamy sauce over a generous portion of mashed potatoes.

- For reheating, gently warm the meatballs and sauce in a skillet over low heat, adding a splash of milk if needed to maintain creaminess.
