Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz ramen noodles
- Fresh basil leaves, for garnish (optional)
Instructions
- Step 1: Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Step 2: Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Step 3: Stir in diced tomatoes (undrained), chicken broth, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- Step 4: Add the cooked chicken back to the skillet and stir to combine.
- Step 5: Cook ramen noodles according to package directions. Drain noodles and add them to the skillet with the chicken and sauce. Toss to coat.
- Step 6: Serve immediately, garnished with fresh basil leaves (optional).
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For reheating, gently warm in a saucepan on low heat to avoid scorching the cream sauce.
