Ingredients

Instructions

  1. Step 1: In a large bowl, combine the warm water and active sourdough starter. Mix until the starter is mostly dissolved.
  2. Step 2: Add the bread flour, whole wheat flour, maple syrup, cinnamon, and salt to the bowl. Mix with a wooden spoon or your hands until a shaggy dough forms.
  3. Step 3: Cover the bowl and let the dough rest for 30 minutes (autolyse). This allows the flour to fully hydrate.
  4. Step 4: After the autolyse, perform stretch and folds every 30-45 minutes for the next 2-3 hours. To do this, grab a portion of the dough, stretch it upwards, and fold it over the center. Rotate the bowl and repeat this process 4-5 times per round.
  5. Step 5: After the stretch and folds, let the dough bulk ferment at room temperature for an additional 4-6 hours, or until it has nearly doubled in size.
  6. Step 6: Gently shape the dough into a round or oval loaf. Place it in a well-floured banneton basket, seam-side up. Cover and refrigerate overnight (8-12 hours).
  7. Step 7: Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
  8. Step 8: Carefully remove the hot Dutch oven from the oven. Gently invert the loaf from the banneton basket into the Dutch oven. Score the top of the loaf with a sharp knife or lame.
  9. Step 9: Cover the Dutch oven and bake for 20 minutes. Then, remove the lid and bake for another 25-30 minutes, or until the crust is deeply golden brown and the internal temperature reaches 205-210°F (96-99°C).
  10. Step 10: Let the bread cool completely on a wire rack before slicing and serving.
