Ingredients
- Carrots, peeled and sliced: 1 pound
- Bacon, cut into 1-inch pieces: 6 slices
- Maple syrup: 2 tablespoons
- Butter: 1 tablespoon
- Apple cider vinegar: 1 teaspoon
- Salt: 1/4 teaspoon
- Black pepper: 1/4 teaspoon
- Fresh thyme leaves: 1 teaspoon
Instructions
- Step 1: Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon grease in the skillet.
- Step 2: Add the sliced carrots to the skillet with the bacon grease. Cook, stirring occasionally, until the carrots begin to soften, about 5-7 minutes.
- Step 3: Stir in the maple syrup, butter, apple cider vinegar, salt, and pepper.
- Step 4: Continue to cook, stirring occasionally, until the carrots are tender and glazed, about 5-7 minutes more.
- Step 5: Stir in the cooked bacon and fresh thyme leaves. Serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best flavor, gently reheat in a skillet over medium-low heat, adding a splash of water if needed to prevent sticking.
- These maple bacon carrots make a delicious side dish with roasted chicken or pork.
- Don't discard all the bacon grease; it's key to the carrots' smoky-sweet flavor, but drain off any excess to avoid a greasy final dish.
