Ingredients
Scale
- 2 ripe mangoes, peeled and sliced
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon alcohol-free vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease a round cake pan with butter or cooking spray.
- Step 2: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.
- Step 3: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla bean paste until fully combined.
- Step 4: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Step 5: Arrange the sliced mangoes at the bottom of the prepared cake pan. Pour the batter over the mango slices, spreading it evenly.
- Step 6: Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for a few minutes before inverting onto a serving plate. Enjoy!
Notes
- To store your Mango Upside Cake, wrap it tightly in plastic wrap or place it in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
- For reheating, simply place a slice in the microwave for about 10-15 seconds to warm it slightly, which will enhance the flavors of the mango and butter.
- Serve your cake with a dollop of whipped cream or a scoop of vanilla ice cream on the side for a delightful contrast to the fruity sweetness.
- A chef's tip: Ensure your mangoes are perfectly ripe for maximum sweetness and flavor; slightly under- or over-ripened fruit can affect the overall taste and texture of the cake.
