Achieve that Wingstop crunch! These Voodoo Fries are smoky, spicy perfection, utilizing paprika and cayenne. Crispy golden results from a simple oven or air-fry process.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 lbs natural-cut frozen French fries
  • 2 Tbsp vegetable oil (if baking or air-frying)
  • 1 Tbsp smoked paprika
  • 1 Tbsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp kosher salt
  • 1/2 tsp granulated sugar

Instructions

  1. Step 1: Preheat the oven to 425°F (220°C) or prepare the air fryer according to instructions. Toss the frozen French fries lightly with the vegetable oil, ensuring they are evenly coated, then spread them in a single layer on a baking sheet or in the air fryer basket.
  2. Step 2: Cook the fries for 18-25 minutes (oven) or 12-16 minutes (air fryer), flipping halfway through, until they are golden brown and crispy.
  3. Step 3: While the fries cook, prepare the Voodoo seasoning mix. In a small bowl, thoroughly combine the smoked paprika, garlic powder, cayenne pepper, kosher salt, and granulated sugar.
  4. Step 4: Once the fries are fully cooked and piping hot, immediately transfer them to a large mixing bowl. Do not allow the fries to cool before seasoning.
  5. Step 5: Sprinkle approximately two-thirds of the prepared Voodoo seasoning mixture over the hot fries. Toss vigorously or use tongs to gently fold the fries until they are completely coated in the spice blend. Add the remaining seasoning to taste and serve immediately.

Notes

  • If you have leftover seasoning, store the dry mix in an airtight container; it makes an excellent smoky rub for chicken or roasted vegetables.
  • To restore crunch to cold fries, spread them in a single layer on a sheet pan and bake at 375°F (190°C) or air fry until warmed through, about 5-7 minutes.
  • For an authentic experience, pair these smoky, spicy fries with a side of creamy Ranch or Blue Cheese dressing to cut the cayenne heat.
  • The secret to fully coated fries is to season immediately after cooking; the residual heat helps the granulated sugar slightly melt, locking the spices onto the potato surface.
