- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 (24 ounce) jar marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Step 1: Preheat oven to 375 degrees F (190 degrees C). Prepare three shallow dishes: one with flour, one with beaten eggs, and one with Italian breadcrumbs and Parmesan cheese mixed together.
- Step 2: Dip each chicken breast in the flour, then in the egg, and finally in the breadcrumb mixture, making sure to coat thoroughly.
- Step 3: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes per side, until golden brown. They do not need to be cooked through at this point.
- Step 4: Pour a thin layer of marinara sauce into the bottom of a baking dish. Place the seared chicken breasts in the baking dish, then top each breast with marinara sauce and shredded mozzarella cheese.
- Step 5: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or oven until warmed through, adding a splash of water to the baking dish to maintain moisture if oven reheating.
- Serve this Parmesan Chicken alongside a simple pasta dish or a crisp Caesar salad for a complete meal.
- For extra flavor, add a pinch of garlic powder and dried oregano to the breadcrumb mixture before coating the chicken.
