Ingredients
- All-purpose flour: 3 1/2 cups
- Granulated sugar: 1/2 cup
- Active dry yeast: 2 1/4 teaspoons
- Salt: 1 teaspoon
- Milk: 1 cup, warmed
- Unsalted butter: 1/4 cup, melted
- Egg: 1 large
- Lemon zest: 2 tablespoons
- Lemon juice: 1/4 cup
Instructions
- Step 1: In a large bowl, combine 2 cups of flour, sugar, yeast, and salt. Add warm milk, melted butter, egg, lemon zest, and lemon juice. Beat with an electric mixer on medium speed for 2 minutes.
- Step 2: Gradually add the remaining flour, mixing until a soft dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
- Step 3: Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Step 4: Punch down the dough and turn it out onto a lightly floured surface. Roll the dough into a 12×18 inch rectangle. Spread softened butter over the dough and sprinkle with a mixture of sugar and lemon zest.
- Step 5: Roll the dough tightly into a log and cut into 12 equal slices. Place slices in a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
- Step 6: Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown. Let cool slightly before frosting with your favorite lemon glaze.
Notes
- Store cooled sweet rolls in an airtight container at room temperature for up to 2 days to maintain their soft texture.
- For a warm, gooey treat, reheat individual rolls in the microwave for 15-20 seconds.
- Serve these lemon sweet rolls with a dollop of whipped cream or a scoop of vanilla ice cream to complement the citrus flavor.
- For an extra burst of lemon flavor, brush the tops of the rolls with melted butter infused with lemon zest before baking.
