- 2 cups water
- 1/4 cup lemon juice (about 1 large lemon)
- 2 tablespoons butter
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
Instructions
- Step 1: Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.
- Step 2: In a medium saucepan, combine the rinsed rice, water, butter, salt, pepper, and garlic powder (if using). Bring the mixture to a boil over medium-high heat.
- Step 3: Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender.
- Step 4: Remove the saucepan from the heat and let it stand, covered, for 5 minutes. This allows the rice to steam and finish cooking.
- Step 5: Fluff the rice with a fork and stir in the lemon juice and chopped parsley. Serve warm.

- Store leftover lemon rice in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or on the stovetop, adding a splash of water if needed to prevent dryness.
