Ingredients

  • Ground beef: 1 pound
  • Onion: 1 medium, chopped
  • Taco seasoning: 1 packet (1 ounce)
  • Refried beans: 1 (16-ounce) can
  • Flour tortillas: 6-8 (6-inch)
  • Shredded cheddar cheese: 2 cups
  • Salsa: 1 (16-ounce) jar
  • Sour cream: 1 cup

Instructions

  1. Step 1: Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Step 2: In a large skillet, brown ground beef over medium-high heat. Drain off any excess grease. Stir in the chopped onion and taco seasoning. Cook until the onion is softened, about 5 minutes.
  3. Step 3: Spread a thin layer of refried beans on the bottom of the prepared baking dish.
  4. Step 4: Layer tortillas, overlapping as needed, to cover the beans. Spread half of the ground beef mixture over the tortillas, then top with half of the salsa and half of the shredded cheese.
  5. Step 5: Repeat the layers: tortillas, remaining ground beef mixture, remaining salsa, and remaining cheese.
  6. Step 6: Bake in preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving. Top with sour cream before serving, if desired.

Notes

  • For easy cleanup, spray your baking dish with non-stick spray before assembling the casserole.
  • Leftovers store beautifully in the fridge for up to 3 days; cover tightly with foil or transfer to an airtight container.
