Ingredients
Scale
- 2 cups (approximately 500g) plain Greek yogurt, full-fat recommended
- 1/4 cup freshly squeezed Key lime juice
- 1 tablespoon Key lime zest (from about 2–3 Key limes)
- 2 tablespoons honey or maple syrup, or to taste
- 1/4 cup graham cracker crumbs
- 1/4 teaspoon vanilla powder
- A pinch of salt
Instructions
- Step 1: Prepare a baking sheet (approximately 9×13 inches) by lining it completely with parchment paper. Ensure the parchment paper extends over the edges to make it easier to lift the bark later.
- Step 2: In a medium mixing bowl, combine the Greek yogurt, Key lime juice, Key lime zest, honey (or maple syrup), vanilla powder, and a pinch of salt. Stir thoroughly until all ingredients are well combined and the mixture is smooth. Taste and adjust sweetness if desired.
- Step 3: Pour the yogurt mixture onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread the mixture evenly into a layer about 1/4 to 1/2 inch thick, forming a rectangular or square shape.
- Step 4: Evenly sprinkle the graham cracker crumbs over the top of the yogurt layer. You can gently press them into the yogurt slightly if desired.
- Step 5: Carefully transfer the baking sheet to the freezer. Freeze for at least 3-4 hours, or until the Key Lime Yogurt Bark is completely firm and solid.
- Step 6: Once frozen, remove the baking sheet from the freezer. Lift the parchment paper with the bark from the sheet and place it on a cutting board. Break or cut the Key Lime Yogurt Bark into desired pieces. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
- Keep your Key Lime Yogurt Bark perfectly refreshing by storing it in an airtight container in the freezer for up to two weeks; this prevents ice crystals and keeps it wonderfully firm.
- Since this bark is designed to be a delightful frozen treat, there's no need to reheat it; simply enjoy it straight from the freezer for that ideal frosty texture!
- Serve these vibrant Key Lime Yogurt Bark pieces as a refreshing pick-me-up on a warm day, a light dessert after dinner, or even crumbled over fresh berries for a delightful breakfast treat.
- For the brightest Key lime flavor and creamiest texture, always zest your limes before juicing and use full-fat Greek yogurt, as it truly elevates the bark's luxurious feel.
