- 1 teaspoon Dried Thyme
- 1 tablespoon Coconut Oil, plus salt to taste
Instructions
- Step 1: Heat the coconut oil in a medium saucepan over medium heat. Add the diced yellow onion and diced red bell pepper and sauté for 5 minutes until softened. Stir in the minced garlic and dried thyme, cooking for 1 minute until fragrant.
- Step 2: Add the rinsed Jasmine rice to the saucepan. Stir the mixture well, allowing the rice to toast lightly in the oil and aromatics for 1 to 2 minutes.
- Step 3: Pour in the coconut milk and the broth. Season liberally with salt to taste. Bring the entire mixture to a vigorous rolling boil, scraping the bottom of the pot to ensure nothing sticks.
- Step 4: Once boiling, immediately reduce the heat to the lowest setting, cover the pot tightly with a lid, and allow the rice to simmer undisturbed for 18 to 20 minutes, or until all the liquid has been absorbed.
- Step 5: Remove the pot from the heat source, but keep the lid sealed. Let the rice stand and steam for an additional 10 minutes. Fluff the Island Coconut Pepper Rice gently with a fork before serving.
