Achieve buttery perfection! Our cookie bliss uses creamy butter, dual sugars (brown and granulated), and a detailed 3-minute electric mixer creaming process for that irresistible light, fluffy base.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla powder
  • 2 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 3/4 cup English toffee bits (such as Heath bar bits)

Instructions

  1. Step 1: Preheat the oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone mats.
  2. Step 2: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until the mixture is light and fluffy (about 3 minutes). Beat in the egg and vanilla bean paste until fully incorporated.
  3. Step 3: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined, being careful not to overmix. Fold in the English toffee bits by hand.
  4. Step 4: Scoop rounded tablespoons of dough (or use a small cookie scoop) and place them 2 inches apart on the prepared baking sheets. Lightly flatten the tops of the cookies with the back of a spoon if desired.
  5. Step 5: Bake for 10 to 12 minutes, rotating the sheets halfway through, until the edges are golden brown and the centers are set but still slightly soft.
  6. Step 6: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, which allows them to fully crisp up.

Notes

  • For maximum crunch, store completely cooled cookies in an airtight container at room temperature for up to 5 days, using parchment to separate layers.
  • To restore the fresh-baked buttery crispness after a day or two, warm stored cookies in a 300°F oven for 2–3 minutes.
  • Elevate the bliss by serving these warm cookies alongside a scoop of high-quality vanilla bean ice cream or a strong, hot cup of black coffee.
  • For an optimal light and crunchy texture, ensure your butter is truly softened (not melted) before creaming, allowing the sugars to fully aerate in Step 2.
