Delicious irresistible baked salmon with spinach and mozzarella bliss recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Salmon fillets: 2 (6-8 oz each)
  • Fresh spinach: 5 oz
  • Shredded mozzarella cheese: 1 cup
  • Olive oil: 2 tablespoons
  • Garlic cloves: 2 minced
  • Lemon: 1/2 (for juice and zest)
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  3. Step 3: Spread the spinach mixture evenly in the prepared baking dish. Place the salmon fillets on top of the spinach.
  4. Step 4: Squeeze lemon juice over the salmon fillets and sprinkle with lemon zest. Season with additional salt and pepper to taste.
  5. Step 5: Top the salmon fillets with shredded mozzarella cheese.
  6. Step 6: Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the cheese is melted and bubbly. Serve immediately.

Notes

  • Refrigerate leftovers in an airtight container for up to 2 days, but the cheesy spinach is best enjoyed fresh!
  • For reheating, gently warm individual portions in the microwave or oven, being careful not to overcook the salmon.
  • Serve this delightful dish alongside a simple quinoa or couscous to soak up the flavorful spinach juices.
  • Don't overcrowd the pan with spinach, cook it in batches if needed to ensure it wilts evenly and doesn't become watery.
