Ingredients
- Salmon fillets: 2 (6-8 oz each)
- Fresh spinach: 5 oz
- Shredded mozzarella cheese: 1 cup
- Olive oil: 2 tablespoons
- Garlic cloves: 2 minced
- Lemon: 1/2 (for juice and zest)
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- Step 3: Spread the spinach mixture evenly in the prepared baking dish. Place the salmon fillets on top of the spinach.
- Step 4: Squeeze lemon juice over the salmon fillets and sprinkle with lemon zest. Season with additional salt and pepper to taste.
- Step 5: Top the salmon fillets with shredded mozzarella cheese.
- Step 6: Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the cheese is melted and bubbly. Serve immediately.

- Refrigerate leftovers in an airtight container for up to 2 days, but the cheesy spinach is best enjoyed fresh!
