- 1 pound ground beef
- 1 medium onion, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can green beans, drained
- 1 cup beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 350 degrees F (175 degrees C).
- Step 2: In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Step 3: Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Step 4: Stir in the diced tomatoes, corn, green beans, beef broth, salt, and pepper. Bring to a simmer.
- Step 5: Pour the mixture into a greased 9×13 inch baking dish.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until heated through and bubbly.
Notes
- For easier cleanup, line your baking dish with foil before greasing.
- Leftover hobo casserole can be stored in an airtight container in the fridge for up to 3 days.
- Reheat individual portions in the microwave until warmed through, or bake in the oven covered with foil.
- Serve this hearty casserole with a dollop of sour cream or a sprinkle of shredded cheddar cheese for extra flavor.
