- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup chicken broth

- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: In a large skillet over medium-high heat, brown the ground turkey. Drain off any excess grease. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Step 3: Add the diced sweet potatoes, diced tomatoes (undrained), chicken broth, oregano, salt, and pepper to the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender.
- Step 4: Pour the sweet potato and turkey mixture into the prepared baking dish.
- Step 5: Bake for 20-25 minutes, or until the top is lightly browned and the mixture is bubbly. Let cool slightly before serving.
