- 1.5 lbs boneless, skinless chicken breasts
- 1 large head broccoli, cut into florets
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Step 1: Preheat grill to medium-high heat. In a large bowl, toss broccoli florets with 1 tablespoon of olive oil, salt, and pepper.
- Step 2: Grill broccoli for 5-7 minutes, turning occasionally, until tender-crisp. Remove from grill and set aside.
- Step 3: In the same bowl, toss chicken breasts with the remaining 1 tablespoon of olive oil, salt, and pepper. Grill chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- Step 4: While chicken is grilling, prepare the creamy garlic sauce. In a small saucepan, heat the remaining olive oil over medium heat. Add minced garlic and cook for 1 minute, until fragrant. Stir in heavy cream, Parmesan cheese, and lemon juice. Bring to a simmer and cook for 2-3 minutes, or until sauce has slightly thickened. Season with salt and pepper to taste.
- Step 5: Slice grilled chicken and divide it between bowls. Top with grilled broccoli and generously spoon creamy garlic sauce over the chicken and broccoli.
- Step 6: Garnish with fresh parsley and serve immediately.
