Ingredients
- Chicken breasts, boneless and skinless: 1.5 pounds
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Heavy cream: 1/2 cup
- Parmesan cheese, grated: 1/4 cup
- Fresh parsley, chopped: 2 tablespoons
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
Instructions
- Step 1: Cut the chicken breasts into 1-inch bite-sized pieces. In a bowl, toss the chicken with 1 tablespoon of olive oil, salt, and pepper.
- Step 2: Preheat your grill to medium-high heat. Grill the chicken bites for 6-8 minutes, flipping occasionally, until cooked through and lightly charred. Ensure the internal temperature reaches 165°F (74°C).
- Step 3: While the chicken is grilling, prepare the creamy garlic sauce. Heat the remaining 1 tablespoon of olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.
- Step 4: Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth.
- Step 5: Remove the saucepan from the heat and stir in the chopped fresh parsley.
- Step 6: Transfer the grilled chicken bites to a serving dish and pour the creamy garlic sauce over them. Serve immediately.
Notes
- Store leftover chicken bites and sauce separately in airtight containers in the refrigerator for up to 3 days.
- For best results, reheat the chicken bites in a skillet over medium heat until warmed through, then gently warm the sauce separately to prevent curdling.
- Serve these chicken bites as a delicious appetizer with toothpicks, or as a main course over pasta or rice.
- Don't overcrowd the grill when cooking the chicken; work in batches to ensure even browning and prevent steaming.
