Ingredients
- Flour tortillas (large size) – 2
- Butter – 2 tablespoons
- Cheddar cheese – 4 slices
- Monterey Jack cheese – 4 slices
- Bread – 2 slices (your favorite kind)
- Mayonnaise – 1 tablespoon
- Tomato slices – 2-3
- Pickles – 2-3 slices
Instructions
- Step 1: Butter one side of each bread slice. Place two slices of cheddar and two slices of Monterey Jack on one slice of bread. Top with tomato and pickle slices. Place the other slice of bread on top to create a sandwich.
- Step 2: Heat a large skillet or griddle over medium heat. Place the buttered side of the sandwich down in the hot skillet. Cook until golden brown and the cheese is melted and gooey, about 3-4 minutes per side.
- Step 3: While the grilled cheese is cooking, lightly butter one side of each flour tortilla.
- Step 4: Once the grilled cheese is cooked, carefully remove it from the skillet. Using a sharp knife, cut the grilled cheese in half to create two equal halves.
- Step 5: Place one half of the grilled cheese in the center of a buttered tortilla. Roll it up tightly, tucking in the sides as you go.
- Step 6: Heat a lightly oiled griddle or skillet over medium heat. Place the burrito seam-down in the hot skillet and cook for 2-3 minutes per side, until lightly browned and heated through. Repeat with the second half of the grilled cheese and remaining tortilla.
