- Green Tomatoes, finely chopped: 4 pounds
- Onions, finely chopped: 2 large
- Red Bell Pepper, finely chopped: 1 large
- Green Bell Pepper, finely chopped: 1 large
- Granulated Sugar: 2 cups
- White Vinegar (5% acidity): 3 cups
- Pickling Spice: 2 tablespoons
- Celery Seed: 1 tablespoon
Instructions
- Step 1: Combine the chopped green tomatoes, onions, red bell pepper, and green bell pepper in a large non-reactive bowl. Sprinkle with 1/4 cup salt and toss well. Cover with a clean cloth or paper towels and let stand for at least 4 hours, or preferably overnight, in the refrigerator. This will help draw out excess moisture.
- Step 2: Drain the vegetables in a colander and rinse thoroughly under cold running water. Press out as much excess liquid as possible.
- Step 3: In a large stainless steel or enamel pot, combine the sugar, white vinegar, pickling spice, and celery seed. Bring to a boil over medium-high heat, stirring until the sugar is dissolved.
- Step 4: Add the drained vegetables to the boiling vinegar mixture. Return to a boil, then reduce heat to low and simmer for 45-60 minutes, or until the relish has thickened to your desired consistency. Stir frequently to prevent sticking.
- Step 5: Carefully ladle the hot relish into sterilized jars, leaving 1/2 inch headspace. Remove any air bubbles by gently tapping the jars on the counter.
- Step 6: Wipe the jar rims clean, place sterilized lids on the jars, and screw on the bands fingertip tight. Process in a boiling water bath canner for 10 minutes (adjusting for altitude if necessary). Remove the jars from the canner and let them cool completely on a towel-lined surface. Check the seals before storing.
Notes
- For optimal flavor, let the relish mature in the sealed jars for at least 2 weeks before opening and enjoying.
- This relish doesn't need reheating; simply serve it chilled or at room temperature to best appreciate its tangy flavor.
- Try this relish as a vibrant topping for grilled sausages, burgers, or even as a flavorful accompaniment to a cheese board.
- To prevent scorching, especially towards the end of cooking, lower the heat and stir more frequently, even continuously, to ensure even thickening.
