- All-purpose flour: 1 1/2 cups
- Rolled oats: 1 cup
- Brown sugar: 1 cup, packed
- Unsalted butter: 1/2 cup, cold and cubed
- Baking soda: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Peach preserves: 1 cup
- Crushed pineapple, drained: 1/2 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a large bowl, combine flour, oats, brown sugar, baking soda, and salt.
- Step 3: Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Reserve 1 cup of the crumb mixture for topping.
- Step 4: Press the remaining crumb mixture into the prepared baking pan.
- Step 5: Spread the peach preserves evenly over the crust, then sprinkle the drained crushed pineapple over the preserves.
- Step 6: Sprinkle the reserved crumb topping evenly over the pineapple layer. Bake for 25-30 minutes, or until golden brown. Let cool completely before cutting into bars.
