Ingredients
- Beef sirloin, cut into 1-inch cubes: 1 pound
- Baby potatoes, quartered: 1.5 pounds
- Garlic, minced: 4 cloves
- Butter, unsalted: 4 tablespoons
- Olive oil: 2 tablespoons
- Fresh parsley, chopped: 2 tablespoons
- Dried thyme: 1 teaspoon
- Salt and black pepper: to taste
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the quartered baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- Step 2: Roast the potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly golden brown.
- Step 3: While the potatoes are roasting, prepare the beef bites. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.
- Step 4: Add the beef cubes to the skillet and sear on all sides until browned, about 5-7 minutes. Do not overcrowd the pan; work in batches if necessary.
- Step 5: Reduce heat to medium. Add the minced garlic and butter to the skillet with the beef. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant and the butter is melted. Season with dried thyme, salt, and pepper.
- Step 6: Add the roasted potatoes to the skillet with the beef. Toss to combine and coat everything in the garlic butter sauce. Garnish with fresh parsley before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days, ensuring the potatoes stay fresh.
- For best results, reheat the beef bites and potatoes in a skillet over medium heat, adding a splash of beef broth or water to keep them moist.
- Serve these garlic butter beef bites with a crisp green salad or roasted asparagus for a complete and satisfying meal.
- For maximum flavor, don't skimp on searing the beef – a good crust creates a delicious contrast with the garlic butter sauce.
