Instructions
- Step 1: Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, matcha powder, and salt until uniformly combined and free of lumps.
- Step 2: In a separate large bowl, cream the softened butter and granulated sugar using an electric mixer until the mixture is light and fluffy (about 3 minutes). Beat in the egg yolk and vanilla bean paste until just incorporated.
- Step 3: Gradually add the dry ingredients to the wet ingredients, mixing on low speed only until the dough comes together and no streaks of flour remain. Divide the dough in half and roll each half into a firm log (approximately 1.5 inches in diameter). Wrap the logs tightly in plastic wrap and chill in the refrigerator for at least 60 minutes.
- Step 4: Unwrap the chilled dough logs and use a sharp knife to slice the dough into rounds approximately 1/4 inch thick. Arrange the slices 1 inch apart on baking sheets lined with parchment paper.
- Step 5: Bake the cookies for 10 to 12 minutes, rotating the baking sheet halfway through, until the edges are set and the bottoms are very lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
