- 4 Bell Peppers (various colors), tops removed and seeded
- 1 pound Ground Beef
- 1 cup Cooked Rice (white or brown)
- 1 (15 ounce) can Tomato Sauce
- 1/2 cup Onion, chopped
- 1 clove Garlic, minced
- 1 teaspoon Italian Seasoning
- 1/2 cup Shredded Cheddar Cheese
Instructions
- Step 1: Preheat oven to 375 degrees F (190 degrees C). In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Step 2: Stir in the cooked rice, 1/2 cup of tomato sauce, chopped onion, minced garlic, and Italian seasoning into the skillet with the browned ground beef. Mix well.
- Step 3: Spoon the ground beef mixture into the prepared bell peppers, filling them completely.
- Step 4: Place the stuffed bell peppers in a baking dish. Pour the remaining tomato sauce over the bell peppers.
- Step 5: Cover the baking dish with aluminum foil and bake for 30 minutes.
- Step 6: Remove the foil, sprinkle the shredded cheddar cheese over the bell peppers, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
Notes
- Store leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual stuffed peppers in the microwave for 2-3 minutes, or until heated through.
- Serve these colorful stuffed peppers with a dollop of sour cream or a side of crusty bread to soak up the delicious sauce.
- For extra flavor, sauté the chopped onion and garlic in a little olive oil before adding them to the browned ground beef.
