Ingredients
Scale
- 1.5 cups plain Greek yogurt
- 1 cup fresh strawberries, finely diced
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla bean paste (optional)
- 1/2 cup granola
- 1/4 cup white chocolate chips (optional, for drizzling)
Instructions
- Step 1: Line a large baking sheet with parchment paper. Wash, hull, and finely dice the fresh strawberries.
- Step 2: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla bean paste (if using). Stir until the sweetener is fully incorporated. Gently fold in the diced strawberries.
- Step 3: Drop spoonfuls (about 2 tablespoons each) of the yogurt mixture onto the prepared parchment-lined baking sheet, forming small, distinct clusters.
- Step 4: Sprinkle each cluster generously with granola. If using, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, then drizzle over the clusters.
- Step 5: Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the clusters are completely solid and firm.
- Step 6: Once frozen, carefully peel the clusters off the parchment paper. Serve immediately as a refreshing treat or store in an airtight container in the freezer for up to 2 weeks.
Notes
- Ensure your delightful clusters stay perfectly firm and delicious for up to two weeks by transferring them to an airtight freezer-safe container immediately after they're solid.
- Skip the oven or microwave; these clusters are designed to be enjoyed straight from the freezer for a perfectly refreshing, icy bite, though a minute or two at room temp can soften them slightly.
- Serve these vibrant frozen clusters as a refreshing breakfast treat, a satisfying afternoon pick-me-up, or even a light, cool dessert.
- For optimal crunch and to prevent your granola from scattering, gently press it into the yogurt mixture right after sprinkling, ensuring it freezes securely onto each cluster.
