- 200g milk or dark chocolate, chopped
- 1 cup (about 125g) digestive biscuits, crushed
- 1/4 cup (50g) unsalted butter, melted
- 1/2 cup (about 8-10) Medjool dates, pitted and finely chopped
- 1/4 cup (30g) unsalted pistachios, roughly chopped
- 2 tablespoons sweetened condensed milk
- 1/4 teaspoon ground cardamom (optional)
Instructions
- Step 1: Melt the chocolate. Place the chopped chocolate in a heatproof bowl set over a saucepan of simmering water (bain-marie), ensuring the bowl does not touch the water. Stir gently until smooth and fully melted. Alternatively, microwave in 30-second intervals, stirring in between.
- Step 2: Create the chocolate cups. Spoon about 1-2 teaspoons of melted chocolate into the bottom of mini muffin liners or silicone molds (approx. 12-15 cups). Using the back of the spoon, spread the chocolate up the sides to form a cup. Place the molds in the refrigerator to set for 10-15 minutes.
- Step 3: Prepare the biscuit and date filling. In a medium bowl, combine the crushed biscuits, melted butter, chopped dates, chopped pistachios, sweetened condensed milk, and ground cardamom (if using). Mix well until everything is thoroughly combined and the mixture can be pressed together.
- Step 4: Fill the chocolate cups. Remove the set chocolate cups from the refrigerator. Divide the biscuit-date mixture evenly among the chocolate cups, gently pressing it down into the chocolate shell.
- Step 5: Top and chill. Drizzle any remaining melted chocolate over the top of each filled cup, if desired, or leave them as is. Return the chocolate cups to the refrigerator for at least 30 minutes, or until fully set. Once firm, carefully peel away the liners or pop them out of the silicone molds before serving.
