Unlock grilled cheese nirvana! Zesty dill pickles, sharp cheddar, and crisp mayo-buttered sourdough create a tangy, gooey masterpiece. Find the complete recipe and nutritional breakdown inside.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Sourdough bread: 2 slices
  • Sharp cheddar cheese: 2 slices (or 1/4 cup shredded)
  • Dill pickle slices (round chips or spears): 4-6 slices
  • Unsalted butter: 1 tablespoon
  • Mayonnaise: 1 tablespoon
  • Fresh dill, finely chopped: 1 teaspoon
  • Black pepper: A pinch

Instructions

  1. Step 1: Prepare the bread by spreading mayonnaise evenly on one side of each slice. This will be the exterior side for grilling. On the other side (the interior), lightly spread half of the butter on each slice.
  2. Step 2: On one slice of bread (butter-side up), layer one slice of cheddar cheese, then arrange the dill pickle slices evenly over the cheese. Sprinkle with chopped fresh dill and a pinch of black pepper, then top with the remaining slice of cheddar cheese. Place the second slice of bread (butter-side down) on top.
  3. Step 3: Heat a non-stick skillet or griddle over medium-low heat. Add the remaining 1/2 tablespoon of butter and let it melt. Place the assembled sandwich into the skillet, mayonnaise-side down. Cook for 3-5 minutes, or until the bottom is golden brown and crispy.
  4. Step 4: Carefully flip the sandwich using a spatula. Continue to cook for another 3-5 minutes on the second side, or until it is also golden brown and the cheese is thoroughly melted and gooey. Press gently with the spatula to ensure even browning.
  5. Step 5: Remove the grilled cheese from the skillet. Let it rest for a minute before slicing in half diagonally. Serve immediately and enjoy the warm, tangy flavors.

Notes

  • For any rare leftovers, wrap tightly in foil and refrigerate for up to 24 hours, though its crispy charm truly shines when fresh.
  • Reheat leftovers gently in a toaster oven or a dry skillet over medium-low heat to bring back some of that delightful crispness; avoid the microwave to prevent sogginess.
  • This tangy delight pairs beautifully with a classic creamy tomato soup, or if you prefer a lighter touch, a crisp side salad makes a wonderful companion.
  • That dollop of mayonnaise on the outside of the bread isn't just for grilling; it creates an unbelievably golden, crispy crust and a unique savory depth you'll absolutely love.
