- 1 cup (about 125g) fresh or frozen raspberries
- 1 ½ cups (about 180g) powdered sugar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla powder
- 1–3 tablespoons water (or milk), as needed
- Pinch of salt
Instructions
- Step 1: If using frozen raspberries, allow them to thaw completely. In a small bowl, mash the raspberries with a fork or process them briefly in a food processor until pureed.
- Step 2: Place a fine-mesh sieve over another bowl and press the raspberry puree through it, using the back of a spoon, to remove all the seeds. Discard the seeds; you should have about ½ cup of smooth raspberry juice/puree.
- Step 3: To the strained raspberry puree, add the powdered sugar, fresh lemon juice, vanilla powder, and a pinch of salt. Whisk vigorously until the mixture is smooth and free of lumps.
- Step 4: Gradually add 1 to 3 tablespoons of water (or milk), one teaspoon at a time, whisking well after each addition, until the glaze reaches your desired pourable consistency. It should be thick enough to coat a spoon but thin enough to drip.
- Step 5: Use the delicious raspberry glaze immediately to drizzle over cakes, pastries, pancakes, or fruit. Store any leftover glaze in an airtight container in the refrigerator for up to 5 days.
