  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 (6 oz each) halibut fillets
  • 1 cup Panko breadcrumbs
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 large lemon, zest and juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. Pat the halibut fillets thoroughly dry with paper towels to ensure crispiness.
  2. Step 2: In a shallow dish, combine the Panko breadcrumbs, lemon zest, garlic powder, sea salt, and black pepper. Mix well to ensure seasonings are evenly distributed.
  3. Step 3: Spread a thin, even layer of mayonnaise over both sides of each dried halibut fillet. Then, gently press each fillet into the Panko mixture, ensuring both sides are fully coated.
  4. Step 4: Carefully place the coated halibut fillets onto the prepared baking sheet, making sure they are not touching. Drizzle the tops of the fillets lightly with olive oil for extra crispness.
  5. Step 5: Bake for 12-18 minutes, or until the halibut is opaque and flakes easily with a fork, and the Panko crust is golden brown and crispy. Cooking time may vary based on fillet thickness.
  6. Step 6: Remove from the oven, squeeze fresh lemon juice over the top of each fillet, and serve immediately.

Notes

  • For best texture, enjoy this bake fresh; any leftovers can be refrigerated in an airtight container for up to 2 days, though the crispiness will soften.
  • To gently reheat and help revive some crispness, warm leftovers in an oven or air fryer at around 300°F (150°C) for 10-15 minutes until just heated through, rather than microwaving.
  • Elevate your meal by serving this delightful halibut with a vibrant green salad, some roasted asparagus, or a fluffy lemon-herb couscous to complement its zesty crispness.
  • For an extra-crisp crust that truly adheres, ensure your halibut fillets are thoroughly patted dry before applying an even, thin layer of mayonnaise; this creates the perfect foundation for the Panko to cling and crisp up beautifully.
