Ingredients
Scale
- 2 slices rustic bread (sourdough or whole wheat recommended)
- 1/2 cup whole milk ricotta cheese
- 2 large eggs
- 1 tablespoon olive oil (plus more for drizzling, optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon fresh chives or parsley, finely chopped (optional)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Step 1: Heat a medium non-stick skillet over medium heat. Add 1 tablespoon of olive oil. Once hot, place the bread slices in the skillet and toast for 2-3 minutes per side, or until golden brown and crisp. Remove toast from the skillet and set aside.
- Step 2: In a small bowl, lightly stir the ricotta cheese with a pinch of salt and pepper until well combined. If desired, you can drizzle with a tiny bit of olive oil for extra creaminess.
- Step 3: In the same skillet (add a touch more oil if needed), crack the two eggs. Cook them sunny-side up, over easy, or to your preference, until the whites are set and the yolks are still slightly runny for ultimate creaminess, about 2-3 minutes. Season the eggs with salt and pepper.
- Step 4: To assemble, spread the seasoned ricotta cheese evenly over each slice of toasted bread, covering the entire surface.
- Step 5: Carefully place one cooked egg on top of each ricotta-covered toast. Finish with an extra sprinkle of salt and pepper, and if using, garnish with chopped fresh chives or parsley and a pinch of red pepper flakes. Serve immediately.
Notes
- While this toast shines when fresh, you can prep components ahead by storing seasoned ricotta and pre-cooked eggs separately in the fridge for up to 24 hours; just toast the bread and assemble right before serving.
- For optimal texture, this dish is best made fresh; if you've stored components separately, gently warm the eggs if desired and always toast your bread just before serving for that perfect crunch.
- Beyond the suggested fresh herbs and chili flakes, a small side salad with a light vinaigrette or some roasted cherry tomatoes would beautifully complement the rich flavors.
- To truly elevate the 'creamy' in Creamy Ricotta Egg Toast, don't skimp on using whole milk ricotta and aim for a perfectly runny egg yolk – these two elements are key for that luxurious, melt-in-your-mouth texture.
