Instructions
- Step 1: Open the can of cinnamon rolls and separate the dough; reserve the icing packet. Cut each cinnamon roll into 4 equal bite-sized pieces. In a shallow bowl, whisk together the eggs, milk, alcohol-free vanilla extract, and ground cinnamon to create the French toast batter.
- Step 2: Dip each cinnamon roll bite into the egg mixture, turning to coat all sides evenly. Allow any excess batter to drip off before cooking.
- Step 3: Melt the butter on a large non-stick skillet or griddle over medium heat. Place the coated bites onto the hot surface, leaving space between them. Cook the bites for 2-3 minutes per side until they are puffy, golden brown, and cooked through.
- Step 4: Remove the cooked French Toast Bites from the skillet and set them aside on a plate. If desired, immediately toss them lightly with granulated sugar while they are still warm.
- Step 5: Prepare the glaze: Empty the reserved icing packet into a small bowl. If the icing is too thick, stir in 1 teaspoon of hot water or milk until it reaches a smooth, drizzling consistency. Drizzle the icing generously over the warm cinnamon roll bites and serve immediately.

- If you have leftovers, refrigerate them in a sealed container for up to three days, but store the glaze separately for best texture.
- For a crispy exterior, warm refrigerated bites in an air fryer or toaster oven at 350°F (175°C) for about 4 minutes instead of using the microwave.
