- Heavy cream: 2 cups
- Whole milk: 1 cup
- Granulated sugar: 3/4 cup
- Unsweetened cocoa powder: 1/2 cup
- Bittersweet chocolate, chopped: 4 ounces
- Egg yolks: 6 large
- Vanilla extract: 1 teaspoon
- Pinch of salt: 1/4 teaspoon
Instructions
- Step 1: In a medium saucepan, whisk together the heavy cream, milk, sugar, cocoa powder, and salt. Heat over medium heat, stirring constantly, until the mixture just begins to simmer. Remove from heat.
- Step 2: Place the chopped chocolate in a heatproof bowl. Pour about half of the hot cream mixture over the chocolate and let it sit for a minute to melt the chocolate. Whisk until smooth. Then, whisk in the remaining cream mixture.
- Step 3: In a separate bowl, whisk together the egg yolks. Slowly drizzle a small amount of the hot chocolate mixture into the egg yolks, whisking constantly to temper them (this prevents them from scrambling). Pour the tempered egg yolk mixture back into the saucepan with the remaining chocolate mixture.
- Step 4: Cook over low heat, stirring constantly with a spatula, until the custard thickens slightly and coats the back of a spoon. Be careful not to boil. This should take about 5-7 minutes.
- Step 5: Strain the custard through a fine-mesh sieve into a clean bowl. Stir in the vanilla extract. Cover the bowl with plastic wrap, pressing the plastic wrap directly onto the surface of the custard to prevent a skin from forming.
- Step 6: Refrigerate the custard for at least 4 hours, or preferably overnight, until completely chilled. Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions. Transfer the ice cream to an airtight container and freeze for at least 2 hours to harden further before serving.

- For easier scooping, let the ice cream soften at room temperature for 5-10 minutes before serving.
- If your ice cream gets too hard in the freezer, try thawing it in the fridge for a few hours to soften it without melting.
- Serve this rich chocolate ice cream with a sprinkle of sea salt to enhance the chocolate flavor.
