- Fresh Pineapple: 1 whole, peeled and cored

Instructions
- Step 1: Cut the pineapple into 1-inch thick rings or chunks. Pat the pineapple pieces dry with paper towels to remove excess moisture. Insert a wooden skewer or stick into each pineapple piece.
- Step 2: Line a baking sheet with parchment paper.
- Step 3: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Alternatively, melt the chocolate in a double boiler.
- Step 4: Dip each pineapple piece into the melted chocolate, ensuring it is fully coated. Lift the pineapple out and allow any excess chocolate to drip off.
- Step 5: Place the chocolate-covered pineapple pieces on the prepared baking sheet. Sprinkle with sea salt and any desired toppings (shredded coconut, chopped nuts, sprinkles).
- Step 6: Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is firm. Serve chilled.

- Store leftover chocolate-covered pineapple in an airtight container in the refrigerator for up to 3 days.
